La Cocina según Caney. Rissoto de boletus con foie y parmessano

SEMANA GASTRONÓMICA DE LAS SETAS

La enigmática expresión 'Dios proveerá' adquiere un literalidad tangible en esta época del año. Llueve, y mucho, y sin explicación aparente para nosotros los profanos, los campos se llenan de toda clase de setas, algunas decididamente deliciosas. Los Restaurante CANEY basan sus propuestas gastronómicas en la estacionalidad de los productos; así, del 17 al 22 de noviembre celebran la Semana Gastronómica de las Setas. Una ocasión que todos los aficionados a este hongo esperan con impaciencia.

Desde La Cocina según Caney os ofrecen la receta de uno de sus platos más demandados. Absolutamente delicioso y de sencilla preparación, ¿alguien da más?
RISSOTO DE BOLETUS CON FOIE Y PARMESSANO
Ingredientes
2 puerros, 100 gr. de arroz (riso superfino carnaroli), 400 ml. De caldo, 300 gr. de boletus edulis, 40 gr. de mantequilla, 200 gr. de nata, 60 gr. de parmesano, 50 gr. de foie. 2 ramas de cebollino.

Se rehoga el puerro en la mantequilla para que se dore un poco, se le agregan los boletus (previamente blanqueados), a continuación el arroz y se sofríe todo un poco. Se añade entonces la sal y se le agrega caldo hirviendo hasta que cubra bien. Se va removiendo a fuego fuerte durante 18 minutos aproximadamente; cuando esté casi cocido, se le añade el queso y la nata, se agrega más caldo si lo necesitase. Servir inmediatamente con unas lascas de parmesano y foie por encima, decorar con unas ramas de cebollino.

It rains, heavily, and without an easy explanation for us, the non-connoisseurs, all shorts of mushrooms and bloom, many of them absolutely delicious. The CANEY Restaurants base their menus upon the seasonal products; therefore, from the 17th to the 23rd of November, they celebrate the Gastronomic Week of the Mushrooms. An event that all of the mushroom lovers wait impatiently.

CANEY’S KITCHEN gives you one of their most demanded dishes. Truly delicious and easy to cook, can it get any better?

RISSOTO WITH BOLETUS FOIE AND PARMESAN

Ingredients 2 leech, 100 gr. of rice (riso superfino carnaroli, 400 ml. of broth, 300 gr. of mushroom (boletus edulis, 40 gr. of butter, 200 gr. of cream, 60 gr. of parmesan cheese, 50 gr. of foie, 2 chives. Brown the leek in the butter, add the boletus (previously cooked) then add the rice and stir-fry until the rice becomes transparent. Add the salt and the broth until it covers all of the ingredients. Keep stirring at high heat during 18 minutes approximately. Once the rice it’s cooked, add the grated cheese and the cream and more broth if needed. Serve immediately with some shavings of Parmesan and foie. Decorate with some chives.

Galicia tiene una rica cultura literaria: Rosalía, Dieste, Novoneira, Castelao, Ferreiro, Valle Inclán…un buen lugar para encontrar ejemplares de cualquiera de nuestros escritores más importantes es la librería Couceiro, ubicada en un precioso edificio de la plaza de Cervantes; como no podía ser de otra manera.
Cinco plantas de negro sobre banco: infantil y juvenil, guías y libros de viajes, todo lo inimaginable escrito en gallego, libros antiguos y actividades culturales y mi sección favorita en la última planta que, además de los libros en oferta se encuentra el taller de encuadernación y restauración. Un luminoso hospital del papel donde pude ver cómo trabajaban en una impresionante, no solo por su tamaño, Biblia familiar del 1872 editada en Filadelfia con tapas de madera y labrada en piel que me hizo replantearme mi escepticismo religioso.
El proceso es el siguiente; escoges un libro antiguo de los millares de ejemplares que poseen y en el taller te lo arreglan, encuadernan e incluso crean preciosos estuches en los que graban la fecha, tu nombre o número de la seguridad social, cada uno con su gusto. Parece que este original regalo se ha convertido en una socorrida idea para las bodas ya que, por unos 150 euros puedes tener, por ejemplo, una de las primeras ediciones del “Sempre en Galiza” de Castelao, restaurado, encuadernado y con su correspondiente estuche personalizado. Un souvenir diferente, creativo y especial; como sempre, en Galiza.

COUCEIRO BOOKSTORE
Galicia has a rich culture in literature: Rosalía, Dieste, Novoneira, Castelao, Ferreiro, Valle Inclán… Couceiro bookstore is a good place to find samples of any of our most important writers; set, as it couldn’t be any other way, in a beautiful building of the Cervantes square. Five floors of black and white writing: child and teenage literature, tourist guides and travel books, everything written in Galician language, cultural activities and old books and my personal favourite in the top floor of the building where, besides the bargains, the book binding and restoration workshop is. A bright hospital for printed-paper where I was amazed in seeing them working in a 1872 Philadelphian family bible. Impressive and not only for its size, but for wooden covers and leather carved motifs, that even made me rethink my religious scepticism.

The process goes as it follows: you choose an old book from the thousands of samples they have and they will fix it, bind it and even make a beautiful case for it, with your name, date or id number embossed -depending on your preferences. It seems to be very demanded as wedding gift, because for no more than 150 euros you can have a, for example, one of first editions of the book written by Castelao “Sempre en Galicia” (always in Galicia). An original and creative souvenir, as it is ‘always in Galicia’.

EXPOSICIÓN FOTOGRÁFICA PALESTINA ANTES DE 1948

¿Qué había en Palestina antes de Israel?
La exposición fotográfica que se puede ver hasta el 29 de noviembre en la Galería Araguaney responde a esta pregunta.
La colección de viejas fotografías procedentes de los fondos de La Arab Image Foundation (una fundación sin ánimo de lucro que recopila la cultura visual y fotográfica de Oriente Medio y el Note de África) muestra viejas fotografías que enseñan inusitados instantes cotidianos de este país desde el s. XIX hasta la creación del estado de Israel:
Judíos, cristianos y musulmanes compartiendo las calles de las principales ciudades del país y mujeres vestidas con faldas cortas y peinados a la moda de Hollywood posando encima de descapotables; respetables burguesas de principios del siglo, vestidas con polisones y pomposos sombreros de estilo inglés, mojando sus pies en la playa o un enorme Zeppelín sobrevolando Jerusalén.
Eran los turistas que visitaban el país los que se fotografiaban ataviados con los trajes tradicionales palestinos a modo de retrato-souvenir.
Golda Meir, la cuarta primera ministra de Israel, declaró al Sunday Times el 15 de junio de 1969: “No existe el pueblo palestino…Ellos no existen”
No nos gusta desautorizar a personas que ya no se pueden defender, así que juzgad vosotros mismos.

PHOTOGRAPH EXHIBITION PALESTINA BEFORE 1948 

How was Palestine before Israel? 

The photograph exhibition that holds the Araguaney Gallery until November 29th gives an answer to this question. The collection of old photographs comes from the Arab Image Foundation (a non-profit foundation that gathers the visual culture from Middle East and Northern Africa.) The exhibition holds old pictures that show unexpected moments of this country, from the XIX C. until the creation of Israel: 

Jews, Christians and Muslims sharing the main streets of the most important cities of Palestine. Women dressed with short skirts and hair-do at the style of Hollywood, standing on convertible cars, respectable bourgeoisie ladies from last Century dressed with bustles and pompous English style hats, with their feet on the sea shore or a huge Zeppelin flying over Jerusalem. 

The tourists were the ones that wore the traditional Palestine dresses to make postcards to take as souvenir.

Golda Meir, the fourth prime minister of Israel, stated to the Sunday Times on June 15th 1969: “There is no such thing as Palestinian people…they do not exist” 

We wouldn’t want to disavow people who cannot defend themselves anymore, just go and see it for yourselves.

Compostela con encanto. Noviembre

NOVIEMBRE
Santiago en Noviembre alberga una belleza lánguida y melancólica, menos obvia, pero no menos bella. La clase de belleza melancólica que sólo gallegos y portugueses parecemos entender con profundidad. Esa ‘saudade’ en el alma que duele -sólo un poquito-. Ese dolor dulce que te recuerda, con voz pausada, que la vida es tan frágil como las hojas de los árboles. Nuestro otoño está hecho, básicamente, de lluvia y hojas, pero también de piedra. Piedra que guarda, seguramente, secretos alquímicos de cientos de años reflejando la ‘vía láctea’ - el camino de las estrellas del cielo- soportando toda su lluvia.
Un paseo por los soportales de las calles de la zona vieja, resguardarte en un café donde contemples las gotas resbalar tras el cristal con una taza caliente entre las manos…que suene una vieja canción y te haga recordar los ojos de un amor perdido…quizás un hondo suspiro…y ya estarás inmerso en nuestro espíritu otoñal: ese sabor agridulce, esa leve, casi imperceptible, nostalgia que crepita en los corazones de los gallegos (capaces de percibir infinitas tonalidades de gris en el aire).
Aún así, y esto os lo aseguro, cuando sale el sol, (porque a veces también luce el sol en otoño) esas mismas calles taciturnas se llenan de gente abrigada y sonriente, llevando el paraguas de ‘non vaia se-lo demo’ (por si las moscas); hasta las ramas de los árboles parecen desenredarse y crecer. 

Quizás porque sabemos que volverán las lluvias, disfrutamos de la débil luz de otoño como nadie y ese, creo, es el secreto de nuestra cultura.

NOVEMBER

Santiago in November holds a languid and melancholic beauty, less obvious than expected yet not less beautiful. The kind of melancholic beauty that only Galician and Portuguese people seem to fully comprehend. That ‘saudade’ in our souls that hurts, just a little. That sweet pain that softly reminds you that life is as fragile as the leaves from the trees. Our Autumn is basically made of rain and dry leaves, but also of stone. Stones that probably keep alchemic secrets after thousands of years reflecting the ‘vía láctea’ in the sky (the path of the stars) also baring all of its rain. 

A walk by the old town arcades, take shelter in a café where to watch the rain drops on the glass windows with a hot cup in your hands; an old tune reminding you of a lost love…a deep sigh…and you will be immersed in our Autumn mood: that sweet and sour taste, that slight, almost imperceptible nostalgia that crackles in Galician hearts – people able to distinguish endless shades of grey in the air-. Even so, and this I can tell, when the sun comes out, because the sun also shines in Autumn from time to time, those same gloomy streets are filled with wrapped up warm smiling people, carrying the ‘just-in-case’ umbrella, even the tree branches seem to unravel and grow. 

Maybe because we know that rain will come back again we enjoy the weak Autumn light as no one else, and that, in my opinion, is the secret to our culture.

Iria es una defensora a ultranza las segundas marcas de las firmas de moda con mayúscula, como veinteañera familiarizada con el mileurismo y la crisis.
Especial orgullo le produce a Iria la firma neoyorquina Tocca, que llega a España pisando fuerte con una colección que evoca la simpleza sofisticada de la Europa más nostálgica y una línea de cosmética orgánica deliciosamente retro, delicadas velas y perfumes, jabones con altas concentraciones de algas e incluso detergentes para prendas delicadas.
También podrás hojear uno de los libros de diseño, fotografía o ilustraciones -a la venta- o sentarte un momento en su cómodo sofá mientras suena Frank Sinatra y te tomas una chocolatina por cortesía de la casa. Déjate llevar por el agradable ambiente de atelier de ayer con el chic renovado de hoy, y sin dejarte los ahorros del mes...si quieres matar el gusanillo llévate una de las sorprendentes camisetas de Threadless.com, con los diseños más votados que artistas de todo el mundo mandan a su página Web y a 20 euros, ¡tuve que comprar dos!
